Aloo Paratha: Culinary Chronicles of Science, Society, and History



There are some dishes that are more than just food. They are memories, emotions, and connections to our past. For me, one of those dishes is aloo paratha, a flatbread stuffed with spiced mashed potatoes and cooked with ghee. Aloo paratha is a staple breakfast in many parts of Pakistan, especially in Punjab, where I grew up.


I have fond memories of my grandmother making aloo paratha for me and my siblings every morning. She would wake up before dawn and start peeling and boiling fresh potatoes from our backyard. She would then mash them with salt, red chilli powder, coriander, and garam masala. She would knead the dough with whole wheat flour, water, and a pinch of salt. She would then roll out small balls of dough and fill them with the potato mixture. She would seal the edges and flatten them with a rolling pin. She would heat a tawa (a flat iron griddle) and cook the parathas on both sides until golden brown, brushing them with homemade ghee. The aroma of the ghee and the spices would fill the whole house and make our mouths water.


We would sit around the table and enjoy the hot and crispy parathas with raita, a yogurt-based sauce with mint, cucumber, and salt. Sometimes, we would also have pickle, chutney, or butter as accompaniments. We would tear off pieces of the paratha and dip them in the raita, savoring the contrast of the soft and spicy potato filling and the crunchy and buttery crust. We would chat, laugh, and share stories as we ate. It was a simple but satisfying meal that nourished our bodies and souls.


Aloo paratha is more than just a dish for me. It is a reminder of my childhood, my family, and my culture. It is a taste of home that I cherish and miss. Whenever I feel homesick, I make aloo paratha and relive those happy moments. I also share it with my friends and introduce them to a part of my identity. They love it too, and appreciate the flavors and the history behind it.


However, there is one thing that I cannot tolerate. My American cousins, who visited us once, ate aloo paratha with ketchup. Ketchup! That is a sacrilege, a blasphemy, a crime against humanity. How can anyone ruin such a perfect dish with such a bland and artificial sauce? I was shocked and appalled. I tried to explain to them that aloo paratha is meant to be eaten with raita, not ketchup. But they did not listen. They said they liked it better with ketchup. I was speechless. I could not believe their ignorance and disrespect. I decided to never speak to them again.


Aloo paratha is a sacred dish that deserves respect and appreciation. It is not just a food, it is a tradition, a heritage, a legacy. It is a part of who I am, and I am proud of it.
